Fish is similar to chicken in a lot of ways –– it can be baked, pan-fried, soup-a-fied, stuffed, rolled, grilled, roasted and more. Fish is also something that can now be purchased at many farmer’s markets across the country. I am fortunate enough to have a household that adores eating fish and a market that carries several varieties of fish. Salmon, though not caught in Texas (salmon prefers cooler waters), can sometimes be found at our markets if you get there early enough but otherwise purchased at Quality Seafood Market or various places around town. If you don’t love the flavor of salmon, or you happen to wake up late and the market is simply sold out, one could also try slightly milder Rainbow or Ruby Red Trout for this dish. Fresh lime juice and zest coating the top of the salmon finished off with some crunchy crushed tortilla chips and then baked until tender and flaky for Lime & Tortilla Crusted Salmon. This manages to get dinner together quickly while bringing lots of flavor to the table.
