Cranberry + Goat Cheese Toasts ~ There’s no doubt about it the holidays are here. Yes, the local radio station has already been pumping out holiday tunes and I have been getting massive amounts of Black Friday Flyers for the last month –– I think I could wallpaper my whole house with them. While we are gathering with our families and friends and loading up our plates with turkey, stuffing, and copious amounts of seasonal side dishes let us not forget we are to be thankful for what we have. You may not even think about it but most of us own or use a regular electric or gas oven everyday and don’t even think twice.
In many countries some can only rely on the use of a pit filled with firewood to cook their family meal. Could you imagine? Having to walk for miles just to gather the wood, then sit around a smoke-filled area so you can put hot food into the bellies of your family? For those of you that have been following along over the last few months you know that I have partnered with the fabulous Solavore Oven group. As we are toasting (get it?) and thanking –– let’s not forget the holiday snacking that is about to begin. Start off your Thanksgiving meal with some of these delicious Cranberry + Goat Cheese Toasts. Crispy toast topped with creamy goat cheese and zesty cranberry sauce make a great (and easy) addition to your holiday festivities.

- 12 Ounces fresh (or frozen) cranberries
- 1/2 Cup brown sugar
- 1/2 Cup orange juice
- 1/4 Cup Water
- 1/4 Teaspoon kosher salt
- 6 ounces goat cheese
- 1 Medium baguette or crusty bread sliced and toasted
- 1 Sprig fresh rosemary

- Place cranberries, brown sugar, orange juice, water, and salt into a solar oven safe pan and cook for 3 hours or until cranberries are fork tender -- stirring them at the halfway point. Remove from the oven and set aside to cool.
- Lay toasts out onto a serving dish and smear each one with a Tablespoon of goat cheese. Next, top each one with a dollop of the cranberry mixture and a couple of fresh rosemary leaves and serve.
***If not using a solar oven you may use a slow cooker for 2-3 hours on low.***
