BLT Bánh Mì Sandwich ~ For what seemed to be like eternity my boys were only into simple sandwiches. You know the usual kids stuff; peanut butter and jelly, grilled cheese, or turkey and cheese, but with age and maturing palates we are entering a much more interesting time in our sammie world. Hooray! Don’t get me wrong once in a while there’s nothing wrong with a good ole pb&j however, I am thrilled they are into spicing things up a bit. Last week I made a BLT in a bolillio roll but decided it needed to be ramped up a bit –– it’s time people –– thus, this BLT Bánh Mì Sandwich was created. It’s a simple roll loaded with lots of flavor. Mint, basil, bacon, tomatoes, jalapeños (which I seeded for the kiddos and they didn’t seem to be phased), and a slightly spicy mayo. We ate this for dinner and the next day they were both begging to have this packed into their school lunches. Watch how quickly it all comes together and grab the recipe below.

- 2 Large tomatoes sliced
- 6 Large bacon strips cooked
- 10-12 Medium lettuce leaves
- 1 Large jalapeno sliced
- 1 Large cucumber sliced
- 1/2 Cup loosely packed fresh mint leaves
- 1/2 Cup loosely packed fresh basil leaves
- 1 Cup mayonnaise
- 1/4 Cup chili pepper sauce or Sriracha sauce
- 4-6 Medium bolillo roll or french bagette slice on top halfway ground black pepper for serving

- In a medium bowl add mayonnaise and Sriracha and mix together until well combined. Slice the bolillo rolls lengthwise on top and generously add the spicy mayo to each one. Next stuff each one with the lettuce, jalapeño, cucumber, tomatoes, bacon, basil, and mint. Top each one with a sprinkle of ground black pepper. Slice each sandwich in half and serve.
