Watermelon Martinis ~ We are not even a week into the official days of summer and I am ready for a break from the break –– anyone else? It was a whirlwind of a visit/vaycay this last week to Vermont and New York. Part of me felt like a twelve year old kid when I got to ride in the backseat of my parents car to the check out the Ben and Jerry’s Ice Cream Factory –– fun! While the other part of me enjoyed a bit of my own parental responsibilities freedom as I got to tour the Cabot Cheese Factory and eat my way around New York City sans the kiddos. Now that I am back in Texas for a bit and the sweet and juicy watermelon season in full swing –– I’m celebrating –– it’s good to be home. This drink has a few simple steps to it that remove most of the pulp from the red fruit goodness but add a bit of zest to the juice. Use your favorite vodka –– I used Dripping Springs for this one –– and serve it chilled straight-up in a spicy rimmed martini glass and start the celebration.

Ingredients
for the watermelon martini
  • 6 cups watermelon cubed
  • 2 medium lime juice
  • 1 cup vodka
For the glass rim
  • 2 Tablespoons celery salt
  • 1 Tablespoons ground cayenne pepper
  • 1 medium lime wedge
  • 4 slices watermelon for garnish
  • 4 small pieces of fresh mint for garnish

Instructions
  1. Combine the celery salt and cayenne pepper into a small plate. Rub four martini glasses on the rims with the lime slice to get them wet. Next, dip each glass rim into the cayenne pepper mixture and set glasses aside.
  2. Place water melon cubes and lime juice into a blender. Mix or pulse on high speed until all of the watermelon is pureed. Once pureed pour into a pitcher through a strainer or cheese cloth to remove pulp. Next stir in the vodka. Fill a large shaker with 1 cup of ice and add in 2 cups of the watermelon mix. Shake well until well chilled.
  3. Pour watermelon martini mixture out into each glass -- continuing the chilling process as necessary. Once glasses are filled garnish with watermelon wedges and mint then serve.
