Warm Summer Squash Salad with Crispy Capers ~ Today it seems odd to be posting about food in the wake of what’s been happening around us here in central Texas with these wild storms and tornado warnings. People are missing, families are out of a homes, and pets are scared and unsure of what is going on around them. You might be thinking how can I help? There are many ways to help but one of the best ways is to contact the Red Cross of Central Texas and see what they are in need of or donate what you are able to give. Another way to help is by fostering a stray pet that needs a warm and loving home, or donating supplies to help get them through until they are reunited with their owners. Let us not forget our sweet farmers during this time –– help the local farmers by purchasing their crops –– the heavy rains not only caused major flooding but it became urgent to pick mass amounts of produce before they lost it all and now they need to sell it. We have begged for rain for many years during this drought and Mother Nature is not messing around with this wet delivery to the area. I made this Warm Summer Squash Salad with Crispy Capers and at the time it was just to eat with dinner but now I see it more as a little bit of sunshine on a plate. Stay safe, my friends.

Ingredients
  • 5 cups summer squash I used a combination / chopped
  • 1/4 cup capers
  • 3 Tablespoons olive oil
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon honey
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon kosher salt
  • 1/2 cup feta cheese chopped or crumbled
  • 1/2 cup fennel leaves or wisps

Instructions
  1. Place a medium pan over medium heat and add in olive oil. Next add capers to the pan and sauté until crispy, about 2-4 minutes. Once crispy remove the capers from the pan with a slotted spoon and allow then to cool. Next add the summer squash into the pan and sauté for 1-3 minute, just until warm and it begins to get golden. Once it begins to get warm remove from the pan from the heat.
  2. Add apple cider vinegar, honey, salt and pepper and stir together well. Pour summer squash mixture out into a serving dish. Top with crispy capers, cheese, and fennel wisps then serve.
