Warm Orange + Cranberry Kale Salad –– It is the time of the year when I feel sort of sad for salad. It gets put on hold around here until after all of the holiday cookies, treats, and goodies are consumed but I still long for a fresh bowl of crunchy greens to eat through all of the holiday hoopla. This year, I have made it a goal to eat more salads during the month of December. I mean, why wait until the new year or for your January healthy resolution to start beefing-up (ha!) in the salad department? The greens are so fresh and vibrant at the markets right now and are begging to be mixed up in a dish. I have made this Warm Orange + Cranberry Kale Salad a few times and taken it to some holiday events and it has been a winner. It can be made ahead of time, it travels well, and it’s a s-a-l-a-d, you know, something that not everyone else is bringing to the party but secretly they want to enjoy in between the cookies … AND … did I mention this would pair well with a champagne cocktail as you ring in 2015! It’s all about balance, right?

Ingredients
  • 6 cups kale chopped
  • 3 large oranges zest & juice (of one), segments (of two)
  • 1 cup fresh (or frozen) cranberries
  • 3/4 cup water
  • 3 Tablespoons honey
  • 2 Tablespoons balsamic vinegar
  • 2 Tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 cups croutons (optional)

Instructions
  1. Place kale in a large bowl and set aside. Place cranberries, water, and honey in a small pan over medium high heat. Bring to a boil, while stirring occasionally, and let cook until cranberries start to pop and the water is gone from the pan, about 2-3 minutes. Once water is gone, remove from the heat.
  2. Add orange zest and juice from one of the oranges, olive oil, and balsamic vinegar and stir until well combined. Once combined, pour mixture over the kale and gently toss together until kale is well coated with vinaigrette. Next add in orange segments and croutons (if using) and serve.
