Warm Apple Oatmeal Crumble ~ You know I am crazy about apple season! Every year we make our way back to the midwest and go apple picking through the colorful foliage while snapping a ton of photos and eating crunchy apples along the way. This year, however, we weren’t able to make it back but lucky for me there are plenty of apples that grow right here in Texas. I love a crisp apple sliced with peanut butter or a simple apple sauce as much as the next guy but the way I adore apples the most is when they are served warm with ice cream slowly melting over the top. This go around I made a Warm Apple Oatmeal Crumble topped with Vanilla Ice Cream (of course!) that transmitted the most wonderful aroma throughout the house that I *almost* forgot that we weren’t on our annual midwest adventure.

Ingredients
  • 4 medium apples cored and chopped
  • 1 cup sweetened dates chopped
  • 2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 6 Tablespoons unsalted butter
  • 1/2 cup milk I used 2%
  • 1 teaspoon ground cinnamon powder
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt
  • 1 pint vanilla ice cream for serving

Instructions
  1. Preheat oven to 350 degrees. In a large bowl add oats, flour, butter, milk, cinnamon, nutmeg, and salt mix well. Next add in the chopped apples and dates then gently stir together until well coated. Pour out evenly into a 9X13 pan. Place into the oven to bake for 35-45 minutes.
  2. Once baked and slightly golden on top remove from the oven and serve with a large dollop of vanilla ice cream.
