Tzatziki Orzo Salad ~ Eventually all of this rain will stop and the sun will return. With the suns return comes the heat and ready or not … summer. We need to start thinking about cooler fare and things that we can bring to the poolside. This week I made this fresh and bright salad: Tzatziki Orzo Salad. Swimming with cool cucumbers and fresh herbs this little number can be served straight-up or topped with any of your favorite grilled meats. Ingredients
  • 1 pound orzo pasta
  • 1 large cucumber chopped
  • 1 cup plain greek yogurt
  • 1/2 cup green onion chopped
  • 1 small jalapeno seeded and minced
  • 2 Tablespoons fresh dill chopped
  • 2 Tablespoons fresh mint chopped
  • 2 Tablespoons fresh cilantro chopped
  • 1 medium lemon juice
  • 1 teaspoon garlic minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup feta cheese crumbled

Instructions
  1. Cook orzo according to directions and set aside to cool completely.
  2. In a large bowl combine yogurt, lemon juice, garlic and salt and pepper well. Next add in the cooked orzo pasta, cucumbers, dill, mint, cilantro, jalapeño, and green onion and stir together gently until well combined. Finally stir in feta cheese and serve.

Ingredients
  • 24 small cubes of watermelon about 1/2 a small watermelon
  • 24 small cubes feta cheese about 1 cup
  • 24 large fresh mint leaves about 4 sprigs

  1. Place cubes of watermelon out onto a serving dish. Top each one with a mint leaf followed by a cube of feta cheese. Next add a toothpick to each square for easier serving or just serve as is.

  • 2 quarts cold fresh water
  • 1 cup fresh strawberries sliced
  • 1 medium lemon sliced
for cucumber mint
  • 2 quarts cold fresh water
  • 1 cup cucumber sliced
  • 3 sprigs fresh mint
for orange thyme
  • 2 quarts cold fresh water
  • 1 large orange sliced
  • 2 sprigs fresh thyme

  1. For each water combination above, combine the ingredients together and serve well chilled or over ice.
