Turkey Pot Pie

One of my favorite things to make (if you don’t already know) is pie for dinner, not only because everyone in my house loves to eat pie but they enjoy saying “we are having pie for dinner” and it’s fairly easy to make. Once you have a few pies made you can keep them in the refrigerator for a few days or stock up your freezer. Spend a little time putting them together and then have them around to pop in the oven when needed. Turkey Pot Pie is perhaps one of my favorite comfort food pies to make – it’s hearty, it’s healthy and delicious besides, we need to balance out after eating all of those oh-so-naughty cookies. There’s room in this recipe to use different vegetables say, try adding diced sweet potatoes, chopped kale or other seasonal local veggies on hand or try using roasted chicken (leftover rotisserie works well) if you don’t have the turkey available. No matter what your choices, if you stick to the basic recipe idea you will create a good crowd pleasing pie. Then you too can say: “Pie, it’s what’s for dinner!” and let the cheering begin.

Ingredients
  • 3 1/2 cups turkey or chicken, roasted and chopped
  • 1 cup carrots or sweet potatoes or corn, chopped
  • 1 cup broccoli or peas, chopped
  • 1 1/2 cups milk I use 2%
  • 1/4 cup all-purpose flour
  • 1/4 cup green onion chopped
  • 2 Tablespoons olive oil
  • 1 Tablespoons butter
  • 1 teaspoon salt
  • 1 clove garlic pressed
  • 1 pie crust

Instructions
  1. Preheat oven to 375 degrees. In a large saute pan add olive oil and garlic and place over medium heat. As the garlic starts to warm add green onion and continue to saute for 2 minutes.
  2. Next add vegetables and saute for until vegetables begin to soften about 5-7 minutes. Push the vegetable to one side of your pan and Slowly add milk to the other side of the pan.
  3. Next whisk in flour into the milk side of your pan by slowly adding a tablespoon at a time. Milk will begin to thicken creating the sauce, depending on your heat source and type of milk you might not use all of your flour, thicken until gravy like. Incorporate this sauce into the vegetables by mixing it all together.
  4. Add turkey and salt while continuing to stir together occasionally for another 5 minutes. Remove mixture form heat and place into your pie shell. Cover with top pie pastry dough and pinch sides together. Prick top of pie with a fork. Place into the oven for 30-40 minutes until pie crust begins to turn golden in color. Remove from oven and let stand for 5 minutes. Serve warm.
