Turkey, Kale + Cheddar Sliders with Mango Sriracha Sauce ~ If you follow along with me over on Instagram you might have noticed the large number of tacos that I have enjoyed over this past week. No judgement, just an observation, of course. As you know I am a big fan of those rolled up tortillas but I am also a cheerleader for satisfying comfort foods as well — not excluding the taco mind you. Over the last few days a few foodies friends of mine were talking about great burgers and that the “official burger season” is about to start. Once I start thinking about juicy burgers and various toppings I need to indulge. Here in Texas burgers are kind of an all year ’round thing because of our lovely weather, but I admit our grill had been ready for a spring clean to really kick things off.  After a good scrub and wash down of the grill, we fired it up to make a these scrumptious Turkey, Kale + Cheddar Sliders with Mango Sriracha Sauce. Fresh ground turkey keeps it on the slightly lighter side along with the crunchy kale, while the cheddar adds the right amount of oozy cheese flavor to match up with the creamy, mango sweet and spicy sauce. We served our little sliders with some easy grilled Pesto Onion Rings — go, clean, and fire up that grill.

Oh this sauce … I think I could drink it all up … sweet, spicy, and creamy = yum. This could also be great on top of fish, as a dip, or even on (you guessed it) … a taco!

Ingredients
  • 1 pound fresh ground turkey
  • 3 cups fresh kale chopped
  • 2 cups cheddar cheese shredded
  • 1 cup bread crumbs
  • 1 large egg
  • 2 Tablespoons milk
  • 1 Tablespoons Worscheshire sauce
  • 1 medium garlic clove minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 6 small slider buns - toasted if desired
  • 6 medium lettuce leaves
  • 1/2 cup mango sriracha sauce -- for serving/see recipe

Instructions
  1. Preheat grill to medium high heat about 375-400 degrees. Combine all ingredients together -- turkey, kale, cheddar, egg, bread crumbs, milk, Worcestershire, garlic, onion powder, salt and pepper, into a large bowl and stir well. Once combined, use hands to form 6 even sized patties. Place patties on the grill and cook on one side until golden brown about 5-7 minutes then flip over to the other side to continue cooking about 4-6 minutes on each side or until cook to desired temperature. Once cooked remove from heat and assemble sliders.
  2. To assemble: Place buns open and brush each side with a Tablespoon of Mango Sriracha Sauce. Next add a piece of lettuce to the bottom of the bun, then top with a burger followed by the top of the bun. Repeat process to make all of the sliders and serve.

Ingredients
  • 1 large mango peeled, seeded and cubed
  • 1/2 cup mayonnaise
  • 2 Tablespoons sriracha sauce
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon kosher salt

  1. Combine all ingredients into a food processor and pulse together until smooth. Dollop on top of burgers, sandwiches, tacos, fish, and more. Store in an airtight container for up to one week.

Ingredients
  • 2 large white onions ends removed + peeled
  • 2 cups fresh basil leaves
  • 3/4 cup olive oil
  • 1/2 cup parmesan cheese grated
  • 1/2 cup pinenuts
  • 1 medium garlic clove peeled
  • 1/4 teaspoon kosher salt

  1. Preheat grill to medium high heat about 375-400 degrees. Cut onions into 1/2” rounds or rings and set aside.
  2. Place the basil, olive oil, parmesan cheese, nuts, garlic, and salt into a food processor and pulse until well combined. Brush each onion ring with pesto mixture and place onto the grill pesto side down. Cook for 4-6 minutes or until golden brown on that side. Once golden, brush the tops with a layer of pesto then flip over onto the grill and cook for another 3-5 minutes or until golden. Once both sides are golden remove from the grill and brush with any remaining pesto and serve.
