Warm Strawberry Skillet Cake with Vanilla Glaze

I am not afraid to admit it –– I have a strawberry addiction and fresh-off-the-vine, ripe, ruby red deliciousness is always a welcomed treat at my table. I’ve mentioned before my lack of gardening expertise when it comes to these sweet little berries but that certainly will never change my fond childhood memories of eating them freshly-picked until my hands were completely stained red and my belly was beyond full. After spending time in the Midwest as a kid, I always thought of strawberries to be a perfect sweet summer temptation and summer just would have not been complete without them. Lucky for me, the Texas heat helps to produce these natural goodies a bit earlier in the year so we are able to enjoy them now. You know that old question: “If you were stranded on an island, what’s one thing you could not live without?” Strawberries would be up near the very top of my list and Warm Strawberry Skillet Cake with Vanilla Glaze would be close behind. Cobbler meets sponge cake in a warm pan of berry goodness finished off with a hint of syrupy vanilla sauce. Now all I need is that island.

Ingredients
for the cake
  • 2 cups fresh strawberries - stems removed and quartered
  • 1 1/2 cups all-purpose flour
  • 1/2 cup + 1 Tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 5 Tablespoons unsalted butter - melted
  • 1 large egg
  • 1 cup milk I used 2%
for the glaze
  • 1 cup powdered sugar
  • 2 + Tablespoons milk
  • 1/2 teaspoon vanilla bean

Instructions
  1. Preheat oven to 350 degrees. Use one Tablespoon of butter to coat a heavy duty or cast-iron 10-12" pan and set aside.
  2. In a large bowl add flour, sugar, baking powder and salt and stir together well. Next, add milk and egg and remaining melted butter and continue to stir together well until the batter is formed.
  3. Pour batter into the buttered pan and then top with strawberries and sprinkle with remaining sugar. Bake for 25-35 minutes or until outer edges are slightly golden and center is cooked through. Remove from the oven and make glaze.
  4. Glaze: Add powdered sugar, milk and vanilla bean and stir well until it becomes honey like in texture adding a touch more milk if needed, 1/4 teaspoon at a time. Drizzle glaze over cake and serve.
