Swiss Chard, Bacon, & Blue Cheese Stuffed Mushrooms ~ I broke up with swiss chard two years ago after a long relationship went south. You see, I planted swiss chard in my backyard garden. At first, it was like most relationships and we were getting along just fine, it was growing quite well and not overly needy, and I thought it was a special rainbow kind of love. Until one day I realized, it had over run my garden and began to be one of those annoying boyfriends that won’t ever give you a minute to be alone or in this case try another vegetable. We were eating it almost daily, in almost every dish, and it felt like a race to consume it all before the season was over. Eventually, I ended up giving away HUGE stalks of it to a few foodie friends –– that I am forever grateful to for taking it off of my hands –– and they whipped up some delicious family meals of their own with it. I, however, decided to take the remainder out of the garden all together and be done with it. Last week at the market, I spotted my old friend –– swiss chard –– and it was giving me that knowing look. It’s hearty, leafy green leaves and colorful charm were begging me over and I fell for it. I brought swiss chard back into my life with these Swiss Chard, Bacon, and Blue Cheese Stuffed Mushroom bites and it’s good to be together again.

Ingredients
  • 1 pound baby portobello mushrooms stems removed
  • 1 cup swiss chard finely chopped
  • 3/4 cup cooked bacon (about 5 strips) chopped
  • 1/2 cup blue cheese crumbled
  • 1 teaspoon fresh garlic minced
  • 1/2 teaspoon ground black pepper

Instructions
  1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside. Remove stems carefully from all of the mushrooms and set aside. In a medium bowl add bacon, swiss chard, blue cheese, garlic, and black pepper and mix together well.
  2. Place a Tablespoon of the swiss chard mixture into each mushroom cap and press down firmly. Once mushroom is full place onto prepared cooking sheet and continue process until all of the mushrooms are filled. Place mushroom tray into the oven and bake for 25-35 minutes or until lightly golden in color and cooked through. Remove from the oven and serve.
