Texas Peach Oatmeal Crumble Cups ~ Meal planning is not something everybody enjoys but one way to stay healthy and eat right is to have foods on hand that can be easily grabbed for those on-the-go days and those night-time-sweet-treat-craving moments. You know the ones, right? Yesterday, I had the pleasure of demonstrating my Healthy Texas Peach & Oatmeal Crumble Cups on the new show, brought to you by KXAN –– Studio 512. Taking tips and cues from Earn That Body’s Kim Eagle, and putting host Amanda Tatom to work, I got to show viewers just how easy, and quick, healthy grab-and-go items can be. This recipe is very adaptable –– try adding a different type of nuts, use berries instead of peaches, use plain yogurt over vanilla. Kim’s basic philosophy is a good one to remember when eating or food shopping –– “eat close to the source and look for foods with the fewest number of ingredients.”

Ingredients
  • 4 cups fresh peaches chopped
  • 2 cups roll oats
  • 2 cups vanilla yogurt
  • 1 cup pecans (or almonds, walnuts) chopped
  • 2 Tablespoons coconut oil
  • 2 Tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt

Instructions
  1. Place 4 pint size containers or jars onto the counter. Place roll oats, pecans, coconut oil, honey, cinnamon, nutmeg, and salt into a large bowl and mix together well. Place a large skillet over medium heat and pour rolled oat mixture into the pan. Give a few gentle stirs will letting the oats turn slightly golden in color and toasted -- about 4-6 minutes. Remove from heat and set aside.
  2. Next, place 1/2 cup of peaches into each serving container. Top each one with a 1/4 cup of the toasted rolled oats followed by a 1/4 cup of vanilla yogurt.
  3. Continue the process one more time for each container. Cover each one with a lid and store in the refrigerator. Serve for breakfast, as a snack or dessert.
