Strawberry, Green Tea + White Chocolate Cookies ~ These cookies have been on my mind for a few weeks now –– every since strawberries hit the farmers markets around here –– and I finally got around to making a batch. The interwebs have been inundated with a LOT of green tea recipes most of which require Matcha Green Tea powder for them. I am not a huge fan of the Matcha Tea Flavor or of the high price tag most of them come with, but I do enjoy a basic green tea once in a while so I use exactly that for this recipe. This sweet treat is part cookie and part cake rolled into one little nugget –– which in my opinion, could very well go with a hot cup of tea (or coffee). Don’t skimp on the icing for these either. I mean if your going for the cookie it might as well be THE cookie, right? Fresh strawberries intertwined with creamy white chocolate chips and just a hint of green tea caressed every so gently with a buttery, sugar-coated top –– start the dunkin’.

After the dough comes together add in the white chocolate chips.

Then stir in the strawberries, form cookies onto the pan and bake.

Add the icing and dip, dunk, or eat.

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher
  • 2/3 cups butter room temperature
  • 2/3 cup granulated sugar
  • 1 large egg room temperature
  • 1/2 cup brewed green tea room temperature
  • 1 cup white chocolate chips
  • 1 cup fresh strawberries chopped
icing
  • 1 1/2 cups confectioners sugar
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons milk

for the cookies
  1. Preheat oven to 350 degrees, line two cookie sheets with silpats or parchment paper and set aside. In a large mixing bowl, cream sugar and butter. Once combined add egg, and green tea and continue to combine.
  2. In a medium bowl add flour, baking powder, baking soda and salt and mix together well. Slowly add flour mixture into the green tea mixture and stir until combined, scrapping sides of bowl as necessary. Next, add in white chocolate chips and stir by spatula. Once combined, add in the strawberries and give a final gentle stir with the spatula.
  3. Next drop by dough by teaspoon onto your cookie sheet spreading leaving room between as they will expand a bit. Use slightly damp fingers to gently press the cookies down a bit. Bake for 8 minutes, then turn cookie sheets. Continue to bake for another 5-6 minutes or until centers are cooked and the outer edges just start to golden. Remove from oven and let cool completely before adding the icing.
for the icing
  1. Combine all ingredients in a bowl and be sure to get any sugar lumps out. Using a butter knife or small spoon place a dollop onto each cookie and spread over the cookies.
