Some days just call for comfort food. For us that happens to be at least once a month. Macaroni and cheese is perhaps the best crowd pleasing food in this household. I actually prefer to make it from scratch. Not only is it fairly easy, once you do it a couple of times, it goes fairly quick, but also you have more control as to what exactly goes into it. Some days its buttery leeks and bacon, and other days I try to “healthy” it up a little such as in this version with fresh spinach and eggs, AKA Stir Fry Spinach Macaroni and Cheese. I am often caught in the kitchen multitasking between dinner and homework time –– trying to figure out some crazy 3rd grade math problem that I should be able to get but, you know, it’s not the same math that we had back in the day.  This. This, will help those nights get a bit easier.

Ingredients
  • 1 pound pasta noodles penne, shells or rigatoni work best
  • 4 cups fresh spinach
  • 2 large eggs lightly whisked
  • 1 cup mozzarella cheese shredded
  • 1 cup white cheddar shredded
  • 2 1/2 cups milk I used 2%
  • 1 Tablespoon onion powder
  • 2 Tablespoons all-purpose flour
  • 3 Tablespoons unsalted butter
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup toasted bread crumbs

Instructions
  1. Make pasta ala dente according to the instructions and set aside. In a large sauté pan add the butter and place over medium heat. Next add the flour and whisk together with the butter until butter is completely melted. Once melted and blended, slowly add the milk and continue to whisk together. Let milk heat up to thicken slightly but don't burn. Then, add the mozzarella and cheddar cheeses and stir together.
  2. Finally, add the pasta back into the pan along with the spinach and the eggs. Stir well to coat the pasta and spinach and continue to cook until the some of the outer edges of the pasta begin to get crispy and the eggs cook through about 5-8 minutes. Remove from heat. Sprinkle bread crumbs over the top of the pasta and serve warm.
