To finish off the hectic week my computer crashed –– and by crashed I mean it’s now on the official “Failure” alert status at the Apple store. Bah humbug! Considering I spend a few hours a day on that darn thing, this was beyond was terrible news. The upside of it all was that it felt like someone was telling me to take it easy and slow things down a bit. So, I did –– if only slightly, but I did. And you know what? It wasn’t the end of the world and I got to hang out with some good friends in the process. This week, I am trying to take it a bit easier as well as lighten up the table offerings a bit. You know what a sucker I am for a good sandwich? This one fits the bill for healthy, hearty, and delicious plus it’s a BIG sandwich so I have to take my time to really enjoy it.

Ingredients
  • 1 large red pepper thinly sliced
  • 1 large cucumber thinly sliced
  • 1 large beet thinly sliced
  • 1 medium onion thinly sliced
  • 1/2 small red cabbage thinly sliced
  • 1/2 bushel fresh spinach stems removed
  • 1 cup feta cheese crumbled
  • 1 cup fresh herbs fennel, mint, cilantro, basil or a mixture
  • 2 cup spicy black bean hummus see recipe
  • 8 slices fresh bread I used a multi-grain seeded bread

Instructions
  1. Slice all of the vegetables thinly using a mandoline or very sharp knife to about 1/16" slices for each. Place bread slices out onto a large cutting board. Spoon a heaping Tablespoon of the spicy black bean hummus mixture onto each slice and spread evenly. Next add feta cheese crumbles to four of the slices, reserving the other four slices until the end to be used as tops.
  2. Place a thin layer of red peppers onto each of the four pieces with the feta cheese, followed by a layer of cucumbers, beets, onions, red cabbage, spinach, and herbs. Top each of the four sandwiches with the reserved pieces to form sandwiches. Slice each one in half and serve.

Ingredients
  • 1 15 ounce can black beans
  • 2 Tablespoons tahini paste
  • 1 large jalapeno stem removed
  • 1 medium lime juice
  • 1 medium clove garlic
  • 1 teaspoon cumin powder
  • 1/2 teaspoon kosher salt

Instructions
  1. Drain the black beans by half and place into a food processor. Next add in the tahini paste, jalapeno, lime juice, garlic, cumin powder, and salt and pulse together until well combined and smooth. Use this as a sandwich spread or a dip with your favorite vegetables or chips.
