Turkey Tortilla Soup ~ There’s a reason why it’s called soup season. The cold(-ish) weather makes one want to cozy up by the fire with a good book, a hot toddy and a hearty bowl of soup. Over the last week I have really discovered what the true meaning of soup season is, or perhaps just the rational behind it all –– It seems almost everyone I know is fighting some sort of “bug” right now. My oldest was in bed for most of Monday followed by our littlest for most of Thanksgiving day and in between these “joys” of parenthood, we the rents have been loading up on vitamin C, zinc and now soup. The last thing one really wants to do while trying to fend off a cold is cook. Lucky for us we just celebrated Thanksgiving and had not only plenty of food in the house but we also had an easy excuse to make homemade turkey stock –– A rich and flavorful stock that can be made simply in a slow-cooker while we get to rest is the way to go. Rather than make a traditional noodle soup with it, I opted for one of my favorite soups: Turkey Tortilla Soup. Much like it’s cousin chili, here in Texas, there is much debate about this soup. I personally prefer this soup to be more broth based rather than a tomato based soup. A turkey broth loaded with peppers, turkey, cilantro, zesty lime and a hint jalapeño finished with melted cheese makes this girl forget all about the next sneeze to come. As they say in The Tale of Despereaux ~ Long Live Soup!

Turkey_Tortilla_Soup_Base

Add olive oil, onions and red peppers to a large pot and place over medium high heat.

Jalapenos

Next add sliced jalapeños ~ remove seeds for a milder soup.

Lime_Zest

Add in the zest from one lime.

Lime_Juice

Add in the juice from the lime.

Turkey_Sliced

Add in the turkey: I prefer a combination of dark and light meat/ shredded and chopped.

Tortilla_Soup_Spices

Add in the spices: black pepper, salt, cumin & chili powder

Cilantro

Add in fresh cilantro ~ thanks Johnson’s Backyard Garden!

Turkey_Stock

After cooking it all together – serve over crushed tortilla chips in the bowl, top with cheddar cheese, a squeeze of lime and a dollop of sour cream. Mmmmmmm … soup!

Ingredients
  • 8 cups turkey stock (or chicken) see recipe
  • 4 cups cooked turkey (or chicken) chopped or shredded
  • 2 Tablespoons olive oil
  • 1 medium onion peeled and chopped
  • 1 large red pepper seeded and chopped
  • 1 large jalapeno seeded (if desired) and sliced
  • 1 medium lime zest and juice
  • 2 cups fresh cilantro chopped and divided
  • 1 Tablespoon chili powder
  • 1 Tablespoon ground cumin powder
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon kosher salt
for serving:
  • 1 medium bag tortilla chips
  • 2 cups cheddar cheese shredded
  • 1 cup sour cream

Instructions
  1. In a large heavy duty pot, add onions and olive oil and place over medium high heat. Saute onion for one minute and then add in the red pepper and jalpeno. Continue to saute for another minute. Next add lime zest, juice, turkey (or chicken if using), one cup of fresh cilantro, chili powder, cumin, salt and pepper and continue to stir until well incorporated.
  2. Next, slowly add the turkey stock into the pot and gently stir. Continue to cook for another 10-15 minutes until hot. Remove from heat.
  3. To serve: place a handful of tortilla chips into the bottom of the serving bowls. Next ladle soup over the tortillas filling the bowl but leaving room at the top. Sprinkle 2 Tablespoons of cheddar cheese over the soup servings followed by a dollop of soup cream and a Tablespoon of cilantro. Serve.
