Roasted Garlic, Cauliflower & Cheddar Cheese Soup ~ Dang, Texas, you surprised me with a SNOW DAY! The kids were home and after playing in the icy, cold air and the tiniest sprinkling of snow they came running back in for some hot coco and I started craving a good hearty bowl of soup. Having both cauliflower and garlic on hand I knew what had to be done –– roasting –– not only good for the soup but it helps warm up the house in the process. This richly Roasted Garlic, Cauliflower & Cheddar Cheese Soup is best served with a crunchy baguette for cleaning up the bowl … yum. Yes, folks, there is a rumor of more snow days coming soon not only in Texas but all around the country ~ make soup, cozy up & stay warm my friends.

Ingredients
  • 1 medium head of cauliflower washed, leaves removed and chopped
  • 1/2 medium onion peeled and cut into large chunks
  • 1 medium garlic head
  • 2 Tablespoons olive oil
  • 2 cups cheddar cheese shredded
  • 4-5 cups vegetable broth
  • 2 Tablespoons unsalted butter
  • 1 teaspoon cumin powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

  • 1/2 cup bacon bits
  • 1/2 cup green onion chopped

Instructions
  1. Preheat oven to 400 degrees. Place cauliflower and onion out onto a cookie sheet and drizzle with 1 Tablespoon of olive oil. Using hands or a spoon gently toss to coat cauliflower and onion. Once coated, place into the oven for 30-35 minutes or until fork tender.
  2. Cut top 1/2" off of the top of garlic bulb. Place onto a piece of tinfoil that is large enough to wrap it in. Drizzle remaining Tablespoon of olive oil over the top. Sprinkle with salt and close foil upward around garlic into an upside down cone shape. Place into the oven next to the cauliflower and roast for 20-25 minutes or until fork tender.
  3. Remove cauliflower, onion and garlic from the oven once ready. Place cauliflower and onion into a blender, followed by 2-4 cloves of roasted garlic - depending upon how "garlic-y" you prefer. Next add vegetable broth, butter, cumin, salt and pepper and blend together well. Once blended remove from the blender and place into a medium pot over medium high heat. Add in cheddar cheese and stir until well melted and incorporated. Once hot, serve with a dollop of sour cream , bacon bits, chopped green onions, or all three.
