Roasted Garlic + Fresh Herb Goat Cheese Spread ~ It’s always snack time in our house. We are a family of perpetual grazers and snackers and there never seems to be enough hours in the day to snack it all. Sure there has been a stint of those unfortunate orange crackers in our home over the years but I think we have reached a new point in our snacking repertoire –– hallelujah! Now I am getting asked for dips, spreads or even special salsas to go with our fruit, breads and/or crackers at snack time. It’s slightly sad because it means the kiddos are growing up … sigh … but it makes me happy because I am able to make them things like this Roasted Garlic + Fresh Herb Goat Cheese Spread served with whole wheat crackers which is something we can all enjoy together. Creamy goat cheese blended in with fresh herbs and roasted garlic takes snack time to a whole new level.

Ingredients
  • 8 ounces goat cheese
  • 2 cloves roasted garlic *see recipe below
  • 2 Tablespoons olive oil
  • 2 Tablespoons fresh parsley chopped
  • 2 Tablespoons fresh cilantro chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions
  1. Place garlic cloves and olive oil into a medium bowl and smash together until well combined. Next, add goat cheese, parsley, cilantro, salt and pepper and continue to mix together well.
  2. Using a spatula form cheese into a ball for serving or simply place into a dish. Serve with bread slices or crackers or use for a sandwich spread.
  3. For roasting garlic: take a medium garlic head, cut off about 1/2" off of the top, drizzle with olive oil, wrap in tin foil with corners pointing to the top into a teardrop shape. Place in the oven and roast for 25-35 minutes until softened and tender. Remove cloves needed for recipe with a fork.
