Shrimp + Cheddar Grits ~ I had every intention of making this dish last week, but alas the days got a away from me and it didn’t happen. The classic shrimp and grits has been on my mind for some time now and after much delay, it finally made it’s way to our dinner table. One of my grandmothers introduced me to grits at a very young age and I have been a fan ever since. She would add a hearty amount of cheese to them –– which makes everything better, right? –– followed by a touch of sweetness. Often times we would eat them with black eyed peas or fried okra, but my favorite way to enjoy these creamy grits was with fresh-off-the-boat shrimp. Shrimp interacting with bits of bacon, onion, jalapeño, and cilantro topped over a bed of creamy cheddar-y grits could quite possibly one of the worlds best comfort foods in my book. I finish it off with a touch of fresh lemon juice to “lighten” it up a bit but the dish remains a bowl of hearty goodness that can be put on your table in a matter of a few minutes not weeks, like my case.

Ingredients
  • 1 pound fresh shrimp peeled
  • 1/2 pound bacon cut into small pieces
  • 1 1/2 cups grits
  • 4 cups chicken stock
  • 2 cups water
  • 2 cups sharp cheddar cheese cubed
  • 1/2 cup white wine
  • 1/2 cup white onion peeled and minced
  • 1 medium jalapeno minced
  • 1 medium garlic clove peeled and minced
  • 1/2 cup fresh cilantro chopped
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons pure maple syrup
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 medium lemon juice for serving

Instructions
  1. Place chicken stock and water into a large pot over medium high heat and bring to a boil. Once boiling add in the grits, bring back to a boil then, cook for another 2 minutes. Next, remove from the heat and add cheddar cheese, butter, salt, and maple syrup and stir until well combined then place lid onto the pan and set aside.
  2. In a large skillet add in chopped bacon and place over medium heat. Sauté the bacon for 2-3 minutes or until it’s almost fully cooked. Once it starts to get crispy, remove from heat and remove the bacon from the pan and place into a small paper towel lined dish. Next, remove half of the bacon oil from the pan and add in garlic and onions and place over medium high heat. Sauté for one minute then add in the white wine and the jalapeños and continue to sauté for another minute. Then add in the fresh shrimp and keep cooking for another 1 minute. After one minute, add the bacon back into the pan while continuing to sauté for another minute then remove from heat.
  3. Place grits into a large serving bowl. Top with shrimp mixture, squeeze lemon juice over the top, then add cilantro and serve.
