Shaved Fennel + Orange Salad with Honey Peppercorn Vinaigrette ~ It seems every year around this time I am reminded again of why we love Texas so much. Over the weekend, many of our neighbors were outside hanging their holiday lights while enjoying the 70+ degree temperatures and fresh air. The weather is a big part of why we enjoy this giant Lone Star State of ours but I have to say the winter produce around these parts is also a giant reason many of us keep a sunny disposition during the crazy holiday season and winter months. I often forget just how lovely the vegetables and fruits are during this time. One of my favorite things to see is the abundance of Texas citrus –– from bright pink grapefruits to golden lemons to coral-colored oranges and more. This week, the fine folks over at Farmhouse Delivery sent me some freshly picked oranges along with a basket other local produce goodies for an “Instagram Takeover!” With the oranges I made this Shaved Fennel + Orange Salad with Honey Peppercorn Vinaigrette a slightly sweet, tangy, and light salad which turned out to be a perfect combo after all of the Thanksgiving hoopla we endured.

Ingredients
for the salad
  • 1 medium bulb fennel shaved or thinly sliced
  • 1/2 cup fennel leaves or wisps
  • 2 large oranges seeded, peeled, and segmented
  • 1 cup croutons ( I used toasted and buttered cubed challah bread)
for the vinaigrette
  • 2 Tablespoons honey
  • 2 Tablespoons orange juice
  • 1 Tablespoon olive oil
  • 1 teaspoon cracked peppercorns
  • 1/2 teaspoon kosher salt

Instructions
  1. In a small bowl whisk together honey, orange juice, olive oil, peppercorns and salt until well combined, then set aside.
  2. In a medium bowl combine fennel with half of the orange slices and half of the croutons. Drizzle with salad vinaigrette and gently toss together.
  3. Portion out salad onto plates. Top each plate with the remaining orange slices, croutons, and fennel wisps evenly and serve.
