Local Savour Spicy Refrigerator Pickled Watermelon Rind

During my childhood I was very fortunate to end up with 5 sets of grandparents. Each one of them had a role in my upbringing and in my love for food and for that, I am forever thankful. Two of my grandmothers had lived on farms at one point during my younger years and after many visits, I grew to really appreciate just what it meant to “live off of the land.” I remember on many occasions having to help harvest fruits and vegetables for supper followed by gathering the compost materials to put them back in the garden –– fancy compost-ers didn’t exist back then. My one grandmother would often be found in the kitchen “saving” something by pickling up this or jamming that and I remember reaping much joy out of those efforts. After making a grilled watermelon salad and a few of these little cocktails, I had quite a bit of watermelon rind in the house so I thought, what would grandma do? Have you ever had pickled watermelon rind? Sure, we could compost the rinds but I couldn’t help but to hear my grandmother’s voice, “oh, you can just pickle that.” Now, you may be asking yourself, “what does one DO with pickled watermelon?” It’s basically a slightly sweet, tangy and spicy condiment and with this recipe you don’t need to know how to can, pickle or preserve. Add the pickled rind to your favorite salad, top a burger, put it over some creamy grits, affix it to your bagel and cream cheese or wrap in bacon and cook until crispy. Local Savour Spicy Refrigerator Pickled Watermelon Rind uses up the “good parts” of the rind and pickles it together with some hot jalapeños, mustard seeds and peppercorns to give it just the right amount of kick to getcha goin’ and to make grandma proud.
