Roasted Beet Salad with Citrus Cilantro Vinaigrette ~ Holy Moly! That was a whirlwind of fun weekend but I am ready for a nap and I just can’t seem to drink enough water as of late. Don’t get me wrong I love all of the food, wine, drinks and good times that comes along with the Austin Food & wine Festival but my body needs a break so pardon the week of salads. Gorgeous farmers market beets are just begging to be thrown into a salad hearty enough for a full meal in what I’d like to call a recovery salad. Roasted Beet Salad with Citrus Cilantro Vinaigrette –– red and golden beets tossed between a citrus-y and cilantro-y vinaigrette then finished with goat cheese crumbles is just what my stomach ordered.

Ingredients
  • 5-6 cups roasted beets red, golden or mixed chopped
  • 1 cup goat cheese crumbled
  • 1/2 cup fresh cilantro chopped
  • 3 Tablespoon grapefruit juice
  • 1 Tablespoon olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
Servings: -6 servings

Instructions
  1. In a small bowl or jar add grapefruit juice, olive oil, honey, salt and pepper and whisk or shake until well combined. Next, stir in cilantro and mix again.
  2. In a large bowl add chopped beets. Pour vinaigrette over the top and gently toss together. Top with goat cheese crumbles and serve.
