Ingredients
  • 5 medium hard boiled eggs peeled
  • 1/2 cup mayonnaise
  • 2 Tablespoons pickled jalapenos chopped
  • 2 heaping teaspoons mustard
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1 loaf Texas Toast see recipe
  • 2 cups mixed greens for serving

Instructions
  1. Place eggs into a large bowl and chop them up by either using two knives or a potato masher or pastry cutter. Chop until all of the eggs are broken up and in small bite size pieces. Next add mayonnaise, mustard, jalapenos, salt and pepper and stir mixture until well combined.
  2. Place a few Tablespoons of egg salad onto a slice of Texas toast, followed by a few pieces of lettuce and another slice of toast. Cut in half and serve.
