Ingredients
  • 4 cups fresh kale chopped
  • 1 Tablespoon olive oil
  • 2 cups water
  • 2 medium garlic cloves minced
  • 1 pound fresh lean ground beef or substitute turkey or chicken
  • 1 6 oz can tomato paste
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons brown sugar
  • 2 Tablespoons chili powder
  • 2 Tablespoons fresh oregano – chopped
  • 2 Tablespoons fresh basil - chopped
  • 1 Tablespoon ground black pepper
  • salt to taste

Instructions
  1. In a large saute pan, over medium-high heat add kale, olive oil, and one cup of water. Saute until kale just starts to softened and water is gone about 10-12 minutes.
  2. Remove from heat and pan and set aside.
  3. Using your same saute pan add ground beef and cook on medium-high until browned about 7-9 minutes. Once browned, remove from heat an drain off any excess oils.
  4. Return pan to a medium heat add kale, garlic, tomato paste, Worcestershire, brown sugar, chili powder and remaining cup of water. Gently stir together use whisk if needed. Bring to a high heat but not boil. Remove from heat and add oregano and basil, pepper stirring well. Finally add the salt to taste.
  5. Serve warm on thick cut bread or buns with cheese.
  6. TIP: for picky eaters puree the kale before adding it into the meat mixture.
