Ingredients
  • 3 cups cooked rice I use brown rice
  • 4 large eggs whisked together
  • 1 cup fresh kale chopped
  • 1 cup sweet peppers stems removed, seeded and chopped
  • 1/2 cup white onion chopped
  • 2 Tablespoons coconut oil
  • 1 large clove garlic minced
  • 3 Tablespoons soy sauce
  • 1 teaspoon ground black pepper

Instructions
  1. Place a large pan over medium high heat. Add coconut oil, onions and garlic and stir together for one minute. Next, add peppers and kale to the pan and continue to sauté until the vegetables are tender, about 2 minutes. Once tender, push to the side of the pan and add in the eggs and let cook, while stirring occasionally for 1-2 minutes –– until lightly scrambled.
  2. Finally add in the rice, soy sauce and black pepper –– stir together until well incorporated. Serve.
