Ingredients
  • 5-6 hatch chili peppers washed, seeded and chopped
  • 2 cups cherries pitted, chopped and drained
  • 1 small onion peeled and chopped
  • 1/4 cup fresh cilantro chopped
  • 1-2 small jalapenos optional, seeded and chopped
  • 1 teaspoon sea salt

Instructions
  1. In a medium bowl, add Hatch Chili Peppers, onion, lime, cilantro, jalapenos (if adding) and salt. Stir well and set aside.
  2. In another medium bowl place cherries in a strainer over bowl and let drain well, gently stirring occasionally to help juices drain.
  3. If serving right away, add cherries into pepper mix and serve. If serving later, place both bowls, covered into the refrigerator until ready for serving. Keeping the cherries separated from peppers prevents the red color from taking over your salsa.
  4. Then, when ready to serve, remove bowls from refrigerator and combine together. Serve with tortilla chips, over chicken, salmon or tofu or rolled up in a burrito of your choice.
  5. *Tip: cherries are juicy and will stain; chop cherries on a separate cutting board and drain well.
