Ingredients
  • 1 pound fresh chicken breasts - boneless & skinless
  • 3 cups apple juice
  • 1 large clove garlic peeled & minced
  • 3 Tablespoons soy sauce
  • 2 Tablespoons fresh ginger peeled & minced
  • 2 Tablespoons brown sugar
  • 1 Tablespoon hot sauce
  • 1/2 teaspoon ground black pepper
  • 1 Tablespoon corn starch
  • 2 Tablespoons cold water
  • 1 cup red cabbage chopped
  • 1 cup feta cheese crumbled
  • 1 cup fresh cilantro chopped
  • 4-6 medium naan bread

Instructions
  1. Place chicken, apple juice, and garlic into a heavy duty pot over medium high heat and cover with a lid and let cook for 12 minutes. After 12 minutes, turn heat down to low and let the juice continue to cook but remove the chicken. Using two forks peel the chicken apart to shred.
  2. Whisk in soy sauce, ginger, brown sugar, hot sauce, and black pepper into the simmering apple juice. In a small bowl combine corn starch and water and whisk together until smooth. Once smooth add the mixture into the apple juice mixture and continue to whisk together.
  3. Next, add the chicken back to the pot of apple juice, give a good stir, and continue to cook for another 2 minutes. Remove from heat. Lay out the naan bread and top each piece with about a 1/2 cup of the shredded chicken down the middle. Top with crumbled cheese, cabbage, and cilantro. Serve.
