Turkey Cheddar Casserole ~ After a day of cooking, eating, drinking and cooking, eating and drinking some more, you need to take it easy. Thanksgiving is perhaps the only time of the year that I truly adore leftovers. Besides having pie for breakfast (YES!) and the fact one doesn’t need to make a big deal out of dinner time over the next few days, our meals are filled with quick and easy turkey sandwiches accented with fresh cranberry sauce, hot and spicy turkey soup and today’s latest a Turkey Cheddar Casserole. Chopped turkey and warm stuffing baked together with gooey cheddar cheese –– now this is a leftover I can really enjoy –– so now we can all get back to nap time.

Turkey Cheddar Casserole 

4 cups stuffing – cooked

3 cups turkey – cooked & chopped

3 eggs

2+1 cups cheddar cheese – shredded

1 cup parsley – chopped

1/2 teaspoon kosher salt

1/2 ground black pepper

Preheat oven to 400 degrees. Place a well greased baking dish to the side. In a large bowl combine stuffing, turkey, eggs, 2 cups cheese, parsley, salt and pepper. Stir until well combined. Pour mixture out into the prepared baking dish. Sprinkle the remaining cheddar cheese over the top and place into the oven. Bake for 20-30 minutes or until cheese is melted and casserole is cooked through.
