Monster Spinach Pancakes

Right now, the season (despite our freeze) is delivering spinach in our neck of the woods but just because it’s packed with vitamins and loaded with flavor doesn’t mean a certain little two year old won’t say “no!” – I think this will forever be one of my least favorite words. He’s two, right? Picky-ness can start to happen and tempers ensue but I refuse to let him win “the battle” of not eating his spinach. Spinach is good for all of us and moreover the Simmons Family Farms is cultivating beautiful, leafy spinach – you can see a produce shift starting to happen as our days get a bit warmer and longer and several winter vegetables start to become scarce at the market…spring is near.

For us, if you add the words “monster food” or “pirate food” while using a grrr or grunt to anything it seems to have a great psychological affect on our tikes. Now, I suggest one might not rush out to do this sort of thing in public but at your dinner table by all means grunt away. (Please don’t hold me accountable if this backfires for you – I am not a professional psychiatrist.) For girls, perhaps try to relate it to “the frog” that a princess must kiss or, tell her she must eat the “evil witch” to get her princess treat?…(again, not a psychiatrist nor do I claim to be)…but it just might work… your kid just might eat spinach AND like it… and I can (almost) promise a few laughs at the table. Our Mr. “No” is now a Mr. “More Monster Pancakes,” please!  I have seen stranger things that we as parents must do to get our children to achieve something from eating to cleaning up. Monster Spinach Pancakes make for an amusing, healthy dinner for kids and adults alike and besides, it’s fun to play with your food.

Ingredients
  • 5 cups fresh spinach well washed
  • 1 cup water
  • 1 clove garlic
  • 2 cups all-purpose flour
  • 1 cup milk I used 2%
  • 2 Tablespoons unsalted butter melted
  • 1 Tablespoon baking powder
  • 1 egg
  • 1 teaspoon nutmeg
  • 1 pinch salt

Instructions
  1. In a food processor or blender place spinach, water and garlic clove and puree together. In a large mixing bowl add milk, butter and egg and mix together. Once mixed incorporate the spinach mixture.
  2. In a medium bowl combine flour, baking powder, nutmeg and salt. Once combined add flour mixture into the spinach mixture. Continue until well mixed and you have the desired consistency, add a touch of water if batter is too thick.
  3. In a large skillet over medium heat pour 3-4 medium pancakes when bubbles start to form on top flip pancakes over and continue to cook. Once both sides are done remove pancakes from the heat and set aside. Repeat pancake making process until all batter is used. Serve warm topped with fresh yogurt or sour cream and a small drizzle of maple syrup.
  4. To create you monster: get creative by using carrots or cheese for arms and legs; raisins or dried cranberries for eyes; broccoli or cauliflower for hands; cut apples or oranges for mouth; and “draw” maple syrup ears on the plate. Pancakes may be stored in an airtight container in the refrigerator or freezer.
