Mini Cinnamon Glazed Apple Muffins ~ Last week, I needed to make a (last minute) batch of something apple-y for my youngest’s kinder class. Have you ever had those moments where you find out or remember the night before? Ugh –– this was one such occasion.  This time it was completely my fault, I had simply forgotten but luckily I managed to remember that evening and got them ready in time.

Over the last four days the class had been talking about apples, apples, and more apples. Covering things like how they grow, Johnny Appleseed, the different varietals, colors and taste profiles all of which led them up to an apple tasting party. The party was laced with things like apple juice, apple sauce, apple chips and these Mini Cinnamon Glazed Apple Muffins and the kids had a blast. These moist and tender muffins give you the flavor of autumn –– mini sized.

Ingredients
for the muffins
  • 2 cups apples peeled, seeded and chopped
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 3/4 cup milk
  • 1/2 teaspoon pure vanilla extract
for the glaze
  • 1 cup powdered sugar
  • 1-2 Tablespoons milk
  • 2 teaspoons ground cinnamon

for the muffins:
  1. Preheat oven to 350 degrees and line or grease mini muffin pans and set aside.
  2. In a large bowl combine flour, baking soda, salt, and cinnamon. Once well combined set aside.
  3. In a large bowl add butter and sugar and mix together until light and fluffy. Next add in the eggs, one at a time, while continuing to mix together. Then add in the milk and vanilla and continue to stir together. Once combined, slowly add in the flour mixture, followed by the apples and continue mixing. Spoon mixture out evenly into prepared muffin tin and bake for 10-14 minutes, or until lightly golden on top and a toothpick comes out clean. Remove from oven and let cool completely. Once cooled add glaze, serve.
for the glaze:
  1. In a small bowl combine the powdered sugar and cinnamon well. Next add in the milk one Tablespoon at a time until desired consistency is reached. Spread onto muffins.
