Kale + Sweet Pepper Stir Fry ~ I don’t know about you but we are in the thick of things at school and gearing up for our (much, much needed) fall break. Between the school functions, kid events and practices, and occasional adult mania things have been more that hectic. Someone said it’s a mercury retrograde thing but sometimes it feels that is always the scapegoat during these times. I am not entirely sure what it is but things are c-r-a-z-y. I came home the other day to a wet spot on the floor in the hallway and immediately assumed it was our sweet dog. “Naughty boy,” I told him. Later, I realized he had absolutely nothing to do with it –– it was an air conditioning leak (gah!)–– terrible I know, the poor dog didn’t have a chance. Don’t worry he has since been smothered in love and hugs and of course, cookies. The point is: days can be cray-cray and you need a healthy and quick recipe to feed the hungry masses –– this Kale + Sweet Pepper Stir Fry fits the bill.

Ingredients
  • 3 cups cooked rice I use brown rice
  • 4 large eggs whisked together
  • 1 cup fresh kale chopped
  • 1 cup sweet peppers stems removed, seeded and chopped
  • 1/2 cup white onion chopped
  • 2 Tablespoons coconut oil
  • 1 large clove garlic minced
  • 3 Tablespoons soy sauce
  • 1 teaspoon ground black pepper

Instructions
  1. Place a large pan over medium high heat. Add coconut oil, onions and garlic and stir together for one minute. Next, add peppers and kale to the pan and continue to sauté until the vegetables are tender, about 2 minutes. Once tender, push to the side of the pan and add in the eggs and let cook, while stirring occasionally for 1-2 minutes –– until lightly scrambled.
  2. Finally add in the rice, soy sauce and black pepper –– stir together until well incorporated. Serve.
