Chicken + Kale Meatballs With Sweet-n-Sour Sauce

Do you know how great you are?

Kale is one of those greens that can be incredibly versatile – make kale chips, throw it into a meatloaf, add it to a salad, simply saute it with olive oil and garlic for a simple side dish, combine it into a satisfying stew or soup, stir fry it up, or plant some in your yard for a simple splash of edible color in the winter time. Kale is one tough green – it can stand up to cool and frosty nights during the winter and stick around through a few hot days (you gotta love Texas winters). Loaded with beta carotene, vitamin K & C and fairly rich in calcium – this green is just all around good. Since our garden is busting at the seams with kale, one has to continue to be creative with it’s use, thus the Local Savour Chicken & Kale Meatballs With Sweet-n-Sour Sauce is the ticket. Ingredients
  • 1 pound ground chicken
  • 2 eggs
  • 1 cup breadcrumbs wholewheat
  • 2 Tablespoons fresh parsley washed and chopped
  • 2 sprigs thyme remove stems
  • 4 cups kale washed and chopped
  • 1 clove garlic
  • 4 Tablespoons olive oil
  • 1 teaspoon sea salt
  • 2 Tablespoons tomato paste
  • 4 Tablespoons white wine vinegar
  • 3 Tablespoons brown sugar
  • 2 Tablespoons soy sauce
  • 2 Tablespoons orange juice
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon Tbs corn starch
  • salt and pepper to taste

Instructions
  1. In a large saute pan add 2 Tbs of olive oil and garlic and place over medium heat. As pan starts to heat up, after about 1-2 minutes add chopped kale and salt and stir together. Continue to cook until kale is softened and then remove from heat to let cool for a few minutes.
  2. In a large bowl add uncooked chicken, eggs, bread crumbs, parsley and thyme and gently stir in together. Once combined add sauteed kale and continue to stir until all is combined together.
  3. Preheat oven to 350 degrees. Place the large saute pan back over medium heat and add remaining 2 Tbs of olive oil.
  4. With a tablespoon, scoop out chicken and kale mixture into hands, roll into balls and place into the saute pan one at a time. Make enough meatballs to fill pan but leave some room for turning meatballs. Lightly brown all of the meatballs on all side and continue until all of your meatball mixture is completely used. As meatballs are done browning on all sides remove them from the pan and place them into a baking dish.
  5. Once all of the meatballs are on the baking dish transfer to the oven and continue to cook in the oven until they are cooked through – about 12-15 minutes.
  6. While meatballs are cooking make the sweet-n-sour sauce. In a medium saute pan combine tomato paste, brown sugar, soy sauce, Worcestershire sauce, orange juice and place over medium heat. Slowly whisk together and slowly add the cornstarch a little at a time. As sauce starts to thicken remove from heat and set aside.
  7. When meatballs are finished remove from the oven, serve warm with sweet-n-sour sauce over the top. Serve with rice, pasta or by themselves.
