Honey Baked Brie Apples ~ Ok, I know, you are done eating for the year. Ok maybe you are not calling it yet and are waiting until the clock strikes midnight to take your break from food and hefty indulgences. Well … New Years Eve is here and a girls gotta eat something to go with all of that champagne, right? I’ve made these Honey Baked Brie Apples before and love not only how easy and elegant they look but how well they go with a festive celebration and of course … bubbly. Tender baked apples with a dollop of melted brie cheese topped off with a drizzle of honey and pistachio nuts are sure to help you and your friends swing in the New Year with a little style.

Start with your glazed apples facing down.

Then flip over, stuff with brie and continue to bake until cheese is melted.

Top with a healthy drizzle of honey and pistachio nuts.

Ingredients
  • 4 small apples
  • 1 small lemon juice and zest
  • 2 Tablespoon honey plus extra for drizzling
  • 1/2 teaspoon sea salt
  • 1/2 pound brie cheese
  • 1/2 cup pistachio nuts chopped

Instructions
  1. Preheat oven to 375 degrees. Core each apple then slice in half from the top to the bottom. On the outside of the apples slice a small amount off to make the apples flat on that side if needed.
  2. In a small bowl add lemon zest, juice, honey and salt. Place into the microwave for 20 seconds on high. Remove from the microwave and gently stir mixture together until well combined.
  3. Place apples onto a baking sheet with the pitted side facing down. Brush mixture over the each of the apples to coat. Once finished set mixture aside and bake apples for 15 minutes. After 15 minutes, remove from the oven, flip over each apple so the shallow hole is facing up. Brush each apple again with the mixture. Place a small slice of brie (about 1 Tablespoon) into each apple hole and place baking sheet back into the oven. Bake for 5-10 minutes or until cheese is just melted. Remove from the oven top each apple with pistachio pieces and serve warm.
