Gruyère Cheese Cauliflower Gratin ~ It is the witching hour –– do you have your Thanksgiving menu planned? Maybe you do, maybe you don’t or maybe you are going to wing it and you are looking for one final yet, easy side dish to add to your holiday feast tomorrow. This Gruyère Cheese Cauliflower Gratin is fairly quick and somewhat impressive to add to your table. Cheese-y-rific cauliflower topped with a few crispy bread crumbs –– what’s not to love and in this version I added a step to make it much faster and easier to coordinate with all of the other dishes you may or may not have already on your menu.

Coat well with the creamy Gruyère cheese mixture, sprinkle with panko bread crumbs and broil for a few minutes until lightly golden in color and serve.

Ingredients
  • 4 cups cauliflower chopped
  • 1 1/2 cups milk I used 2%
  • 1 cup gruyere cheese chopped
  • 2 teaspoons fresh thyme stems removed
  • 1 Tablespoon cornstarch
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup panko bread crumbs
  • 1 teaspoon olive oil
  • 1 teaspoon butter for dishes

Instructions
  1. Use butter to grease two serving bowls and set aside. Place chopped cauliflower into a medium sized bowl and cover with water. Place into the microwave for 5-6 minutes and cook until tender. Once tender drain off water and set aside.
  2. In a small pan add milk and cornstarch and whisk together well. Once well combined place over medium high heat. Add Gruyère cheese, thyme, salt and pepper and stir together until well combined and cheese is melted. Once melted let cook for one minute then remove from heat. Place caulliflower into prepared dishes and pour cheese sauce over the top and turn on boiler.
  3. In a small bowl add panko bread crumbs and olive oil and stir together well. Scoop Panko mixture out evenly onto the tops of the cauliflower mixture. place into the boiler and let cook for 5-6 minutes or until tops are golden. Once golden remove from the heat and serve.
