Radish Butter + Fresh Dill Biscuits ~ I don’t really remember eating a lot of radishes while growing up but I do remember my mother loving them simply chopped and mixed in with fresh cottage cheese and as I got older I too would start to enjoy them this way. The farmer’s market radishes are so vibrant right now and at their peek it’s hard not to buy them for their beauty alone. But what to do with a bunch of radishes? I can’t eat the whole lot by myself (or could I? hmmm … ). Spicy, peppery and slightly sweet, I diced them up finely and add them to sweet cream butter and let the butter reset in the refrigerator for a few hours. After that, the easy to make radish butter is ready to be added to my Radish Butter & Fresh Dill Biscuit recipe. These drop biscuits have a hint of that pepper and the dill adds a nice layer of flavor and who doesn’t love a just-out-of-the-oven-warm biscuit? Serve biscuits with lunch or dinner, have them on hand to make mini-sandwiches, add them to your holiday table or … you can even try them with a side of cottage cheese…

Ingredients
  • 1 bunch radish finely chopped
  • 6 Tablespoons unsalted sweet cream butter room temp
  • 3 Tablespoons fresh dill chopped
  • 2 cups whole wheat pastry flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1 cup milk I used whole milk

Instructions
  1. In a medium bowl combine soft butter with radish and stir together until combined thoroughly.
  2. Place into a small bowl, yet big enough to fit radish butter and cover with plastic wrap. Place into the refrigerator for 3-4 hours or overnight until butter is cold again.
  3. Once butter is cold, preheat oven to 450 degrees. In a large bowl combine flour, baking powder and salt. Next add radish butter and stir together until mixture starts to look like breadcrumbs ensuring not to over mix or let the butter get soft again.
  4. Next, add the dill and give it one more good stir. Slowly pour in the milk and continue to stir until dough is formed, batter will be slightly sticky.
  5. Next use either a greased pan or a silpat/parchment paper lined pan and drop biscuits on to pan one tablespoon at a time about 1 inch apart from each other. Bake in the oven for 11-14 minutes or until golden brown.
  6. Serve warm.
