Stuff happens. Stuck in traffic (seriously!), caught in a lengthy conversation you just can’t seem to get out or just plain late leaving the office i.e. playground (well, for some of us anyway) AND you got a crowd of hungry zombies family members. It’s because of this everyone NEEDS a go-to pasta dish up their sleeve to satisfy the masses. After a recent trip to the newly famed Antonelli’s Cheese Shop, I stumbled upon an amazing feta cheese that’s perfect for go-to pasta fare – Pure Luck Dairy Feta Cheese from Dripping Springs, Texas. *Has anyone else noticed good foodie stuff happening in Dripping Springs? – from vodka producers to restaurants and bars to cheese… not such a sleepy little town after all, eh?*

The luscious feta cheese from Pure Luck Dairy isn’t pungent or sharp like a traditional feta and it’s almost goat like in creaminess yet when tossed into warm pasta it manages only to melt slightly and remain feta-esque. My gratifying Broccoli, Carrot + Feta Cheese Whole Wheat Pasta yields sprightly results – while the pasta water is heating up, chop your veggies to throw in with your noodles when boiling and serve with feta cheese. Dinner is done, family is fed and hey, if you’re into the ‘Meatless Monday’ craze – this one fits the bill.

Ingredients
  • 1 pound whole wheat penne pasta
  • 2 cups broccoli roughly chopped
  • 2 cups carrots roughly chopped
  • 1 can diced tomatoes canned
  • 1 cup feta cheese
  • 2 Tablespoons olive oil
  • 2 Tablespoons fresh oregano chopped
  • salt and pepper to taste

Instructions
  1. Start pasta according to package directions. While water for pasta is heating up, chop your vegetables. Once water is boiling add pasta and allow to cook for 7 minutes.
  2. While pasta is still cooking add in your broccoli and carrots until pasta is done ala dente.
  3. Drain pasta and vegetables together and save 1/2 cup of your used pasta water.
  4. Place pasta and vegetable back into your pasta pot. Add 1/2 cup pasta water, tomatoes, olive oil, oregano and salt. Gently mix together. Next add feta cheese and gently stir. Serve warm.
