Ginger Chicken + Snow Peas ~ You would think with the kids out of school dinner time would be a little easier. Some days sure, but other days not so much. It seems the five o’clock whistle blows before you know it and you end up scrambling to get something together. Did I mention the fact that with all of the swimming, playing and summer growth spurts going on these kids are H-U-N-G-R-Y! Who knew such little bodies could devour so much food in one sitting –– holy wow. Tonight was one of those nights. We got home later than I had hoped, the boys were starving and I was rushing to throw our dinner together. The fresh from the farmers market snow peas laced with fresh ginger and chicken came together quickly in this Ginger Chicken & Snow Peas dish so we could get back to more important things like what summer-y, beach-y, and pool thing we should do next.

Ingredients
  • 1 - 1 1/2 pounds skinless, boneless chicken thighs chopped into bite size pieces
  • 1/2 pound fresh snow peas ends trimmed
  • 1/2 cup water
  • 2 Tablespoons olive oil
  • 1 Tablespoon fresh ginger finely minced
  • 1 Tablespoon corn starch
  • 1 Tablespoon brown sugar
  • 1 teaspoon chili pepper flakes (optional)
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4-6 cups cooked rice for serving

Instructions
  1. In a medium bowl add water, ginger, cornstarch and whisk together well. Next add the onion and garlic powder, chili pepper flakes (if using), salt and pepper and continue to whisk together until well combined. Place chicken into the mixture and stir to coat all sides then set aside.
  2. Place a large skillet over medium high heat and add olive oil to the pan. Let the oil warm up for 30 seconds then add in the chicken mixture. Cook and stir until the chicken is cooked through and the sauce starts to thicken about 6-9 minutes. Turn off the heat and add in the snow peas. Stir the snow peas in for about 1 minutes to warm them and coat them with the mixture.
  3. Pour mixture over cooked rice and serve.
