Roasted Maple Bacon Broccoli Bites

Maybe it’s the football or the big sweaty men running around the field or perhaps the cold beer but a good Super Bowl Party NEEDS meat in my book. If there’s cheering, nail biting and betting going on you betcha there’s gonna be some serious eating. To go along with this meat theory of mine and these tasty kibbles, I’ve corrupted broccoli and turned it to the dark side with bacon — ok, we’ve been watching a LOT of Star Wars lately, what can I say? Roasted Maple Bacon Broccoli Bites uses only three ingredients and a few moments of prep time so you can focus on the game, the half-time commercials AND (don’t forget) Beyonce’s lips (she is really singing) … making these a great addition to your viewing party. Bonus: You only need one hand to eat them so the other hand is free for high-five’n.

Ingredients
  • 1 pound broccoli folorets
  • 1/2 pound bacon strips
  • 1/4 cup pure maple syrup
Servings: -20 florets

Instructions
  1. Preheat oven to 325 degrees. Line a cookie sheet with tin-foil and a cookie cooling rack, and set aside. Next slice bacon strips into thirds. Take one piece of broccoli floret and one strip of the cut bacon and wrap the stem of the broccoli until bacon is finished. Place wrapped broccoli onto cookie cooling rack on the cookie sheet with the bacon seem facing down. Continue process until all of the broccoli is wrapped and on cookie cooling rack.
  2. Gently brush each wrapped broccoli with maple syrup and until all of them have been brushed. Then place into the oven. Roast for 35-45 minutes until bacon is slightly golden and broccoli is tender.
  3. Remove from the oven and place broccoli onto a paper towel lined plate to drain off any excess oil. Add one final little drizzle of maple syrup to each floret and serve warm.
