February is the shortest month of the year but it is perhaps the most passionate and Mother Nature knows all too well just what to do by giving us a bounty of beets. Hues of luscious reds, rich deep purples and vibrant pinks mixed in with some golden orange tones are popping out with these flavorful and diverse root vegetables during this love month. Beets provide anti-inflammatory, antioxidant and detoxification support and the leaves as well as the root can all be eaten = a super food indeed. Also in the red category … you may see hints of strawberries and tomatoes available in both hothouse and transplants.
