Pasta Scramble

“We need to eat this stuff up,” my mother would announce to the group often lingering in her kitchen. My mother was always highly skilled at using the uneaten goods in the refrigerator to reduce our waste, to ensure a constant rotation of fresh food and to get lunch or dinner on the table. In fact, to this day, she is still that way – whenever we go to visit she’s using delicious remnants in creative ways to feed all of those that may enter her kitchen.

Often times I use up what I can to make the meals stretch out and to reduce waste, lucky for me the Hubs loves to eat leftovers and the kiddos don’t really seem to mind. One of my favorite ways my mother would polish off extra pasta was to simply heat it in a sauté pan with a few eggs and serve it with a dollop of applesauce on top – there is something about this combination that really works and that makes for a quick, easy and satisfying meal – Pasta Scramble is my version of this fantastic creation. This little dish not only utilizes your surplus of pasta, it makes a momma proud.

Ingredients
  • 1/2 -1 pound whole wheat pasta cooked/leftover
  • 3-4 eggs
  • 1 Tablespoon olive oil
  • 1 teaspoon fresh ginger pressed
  • 1 cup applesauce
  • 1/2 cup vanilla yogurt or sour cream
  • salt and pepper to taste

Instructions
  1. In a large saute pan, add olive oil, eggs and ginger – lightly scramble together over medium heat and let cook for 1 minute.
  2. Gently add pasta into the egg mixture and slowly stir together while continuing to cook over medium heat. Saute together for another 3-5 minutes until eggs are cooked through and pasta is warm or until the eggs are cooked to your liking.
  3. Remove from heat and divide pasta up onto serving plates or bowls. Top each pasta portion with a dollop of applesauce and a spoonful of yogurt or sour cream. Serve warm.
