Cucumber Fennel Salad with Garlic Breadcrumbs ~ I have always been a fan of fennel but this year in particular my love for them seems to have grown. Well, it’s either my love or I just really missed having them on the table. Does that ever happen to you? Anyway, here we are surrounded by the anise flavored, carrot cousin and I am pairing it up with some cool cucumbers, salty cheese, and garlic-y breadcrumbs in this salad. I decided to use breadcrumbs instead of a big crouton to keep the salad lighter and frankly, after all of the eating that’s been happening in my world as of late, it’s good to just keep it simple. This is also one of those versatile dishes that can be served in small cups or plates as an appetizer, in a bowl for a summer-y side dish, on a platter for a dinner salad, or topped with grilled chicken or shrimp as a full meal deal. However you decide to serve it, it’s going to keep things crunchy and light this summer.

Fresh and light cucumbers, you can slice them how you want but I prefer them thin and round for this salad.

Ingredients
for the salad
  • 2 medium cucumbers thinly sliced
  • 1/2 medium bulb fennel thinly sliced
  • 1/2 cup feta cheese crumbled
  • 2 Tablespoons olive oil
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoons honey
  • 1/2 teaspoon kosher salt
  • 12 teaspoon ground black pepper
  • 1/2 cup garlic bread crumbs see recipe below
  • 1/4 cup fennel wisps for garnish
for the garlic breadcrumbs
  • 1/2 cup bread crumbs
  • 1 medium garlic clove minced
  • 1 teaspoon onion powder
  • 1 Tablespoons olive oil
  • 1/4 teaspoon kosher salt

Instructions
for the toasted garlic breadcrumbs
  1. Place a small saute pan over medium heat and add olive oil and garlic and let cook for 30 seconds then, add the bread crumbs onion powder and salt and gently stir together. Saute for 2-3 minutes or until bread crumbs are lightly toasted. Once toasted remove from the heat and set aside.
For the salad
  1. In a small bowl add olive oil, apple cider vinegar, honey, salt and pepper and whisk together until well combined and set aside.
  2. In a large bowl place cucumbers, fennel, and feta cheese. Drizzle apple cider vinegar mixture over the top and gently toss everything together until well coated. Pour cucumber salad mixture out onto a serving plate. Top with garlic bread crumbs and fennel wisps and serve.
