Creamy Garlic Potatoes {with Video} ~ As of late I have been in need of more comfort foods, okay maybe not as of late because, really, one can always enjoy comfort foods in my opinion. When dinner time rolls around there’s a moment of yes, I’ve got the main dish figured out but what the heck should I serve with it that’s uncomplicated and easy to whip together? Sure there’s macaroni and cheese which I love just as much as the next but why not try these Creamy Garlic Potatoes. Yes, Cream + Garlic + Potatoes = a whole lot of yum. I must admit these make for a great side dish addition to almost any meal but also can be enjoyed cold the next day as you are standing in from of the refrigerator with the door open looking for more food. Ingredients
  • 1 pound red potatoes chopped into bite sized pieces
  • 4 Tablespoons olive oil divided into 2 + 2
  • 3 medium cloves garlic minced
  • 1/2 cup white onion chopped
  • 1 cup heavy cream
  • 1/2 cup fresh parsley chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions
  1. Place 2 Tablespoons into a large heavy duty pan over medium high heat. Next add in potatoes and enough water to water them -- about 3-4 cups. Place lid over the pan and allow potatoes to cook until fork tender and water is gone from the pan.
  2. Next, add remaining olive oil and onions and stir until well combined. Allow potatoes to get slightly golden and the onion to get tender. Once onion are tender, add in heavy creamy, salt and pepper and stir until well combined. Finally finish with parsley and serve.
