Creamy Cheddar Cheese Grits Soufflé with Blistered Tomatoes ~Things have been very busy around here and there’s no real sign of anything slowing down any time soon. Holiday events, parties and festive things galore have taken over in the last few weeks –– not to mention all of the little things adding up through school that my boys need to have taken care of before the end of the 2015 and the holiday break begins – ugh! It’s a bit overwhelming I must say, however, among the madness comes good times, catching up with old friends and the best of the giving time. One of my favorite things to do this time of year is to give back and help those that I am able to while using this as a time to teach my boys about giving –– it truly, truly fills my heart. Of course most of these events involve food in one form or another –– either to give or enjoy while putting together holiday packages for others. One event this week was with several foodie friends that gather together to stuff stockings and wrap gifts for a special group of young ladies and their siblings –– Girl Scout Troop 1500. This group of girls are in a situation that many can’t understand –– let alone a child. The Troop’s mothers have all been incarcerated at some point during their child-raising years thus, leaving these girls to learn leadership and life skills on their own and celebrate the holidays without their mothers. What is most humbling about their “wish lists” is that they really don’t ask for much just basics such as tooth brushes, socks, and sweat pants. THIS is what it’s all about being able to share with friends and fulfill a simple wish lists. 

For this delicious luncheon I made this Creamy Cheddar Cheese Grits Soufflé that paired well with an Eggplant Parmesan that one of the other lovely ladies had brought –– thank you N! I have since made these grits a few times over and when I found tomatoes at the market on Sunday (gotta love Texas in December) I knew I had to use them to top this cheese-y number with some easy blistered tomatoes.

Ingredients
for the Creamy Cheddar Cheese Grits Soufflé
  • 1 1/2 cups vegetable stock
  • 1/2 cup quick cooking grits
  • 1 cup sharp cheddar cheese grated
  • 1/4 cup unsalted butter
  • 1/3 cup milk I used 2%
  • 2 large eggs
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1/4 cup parmesan cheese grated
for the Blistered Tomatoes
  • 1 pint small tomatoes cherry, sungold, sweet 100's
  • 1 Tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon kosher salt

for the Creamy Cheddar Cheese Grits Soufflé
  1. Preheat oven to 350 and butter the inside of a 1 1/2-2 quart baking pan or 2 (8 ounce) ramekins. In a small bowl, whisk together eggs and milk and set aside.
  2. Place the vegetable stock into a medium pan over medium high heat. Next stir in grits and continue to stir until well combined and creamy -- about 4-6 minutes. Once creamy, remove from heat and add in cheddar cheese, butter and black pepper and stir until well combined. Next add in the egg mixture and give a final good stir. Pour out mixture evenly into pan or ramekins, sprinkle the tops with paprika and parmesan cheese and place into the oven. Bake for 30-40 minutes or until toothpick comes out clean. Serve with Blistered Tomatoes over the top.
for the Blistered Tomatoes
  1. Place a large pan over medium high heat and add in olive oil and tomatoes. Using a knife gently poke a hole into each tomato and stir the tomatoes into the olive oil to coat them. Let them cook for 5-7 minutes or until all of them start to blister or pop open more. Next, add in onion powder, garlic, oregano, sugar and salt then reduce heat to low. Gently stir together and allow to cook for another 3-4 minutes. Remove from heat and serve over the Creamy Cheddar Cheese Grits Soufflé.
