Country Style Roasted Lamb with Mint Chimichurri ~ I always have food on my mind, or so it seems, and lately I’ve been thinking a lot about lamb. Partly due to the fact that the American Lamb Board is bringing it’s Lamb Jam Tour to Austin for the first time (I am honored to be on the judges panel), and partly due to the warmer weather that we’ve been enjoying –– which in turn reminds me that spring is around the corner and that brings lamb to mind for me. It’s not something that we eat everyday, or a lot for that matter, but when we do I like to seek out grass-fed when I can. Over the years lamb has gotten a bit of a “bad rap” and considered to be an expensive meat to dine on, I *think* in part by the classic French-cut Rack of Lamb served with Mint Jelly at upscale restaurants back in the day that many-a-grandmas like to order. Today, there are more cuts available for the general public to bring home that fit most budgets. For this recipe I used a sirloin cut from I O Ranch — marbled and tender yet cooks up easily. Roast it in with some chopped butternut squash, onions, and croutons then top with a minty and slightly spicy sauce and you’ve got dinner on the table minus the blue hairs.

Ingredients
for the lamb
  • 1 1/2-2 pounds lamb sirloin
  • 1 large butternut squash peeled and chopped
  • 1 medium onion peeled and chopped
  • 2 cups bread cubed
  • 2 Tabelspoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 Tablespoon dried parsley flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
for the Chimichurri
  • 1 cup fresh mint
  • 1/4 cup olive oil
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoons red chili pepper flakes
  • 1/4 teaspoon kosher salt
  • 1 medium clove garlic minced

Instructions
for the lamb
  1. Place olive oil into a large cast iron skillet over medium high heat. Add in bread cubes, garlic powder, onion powder, parsley and stir until well combined. Cook until bread is well toasted -- about 3-5 minutes -- then remove from pan and set aside.
  2. Preheat oven to 350 degrees. Next add the butternut squash to the pan along with one cup of water and place over medium high heat. Cook while stirring occasionally until water is gone from the pan -- about 5-8 minutes. Remove squash from the pan and set aside.
  3. Next add the lamb into the pan and place over medium high heat. Cook lamb until lightly golden on the outside then flip and cook the other side until lightly golden. Once golden add the onion to the pan and stir in well. Then add the butternut squash followed by the bread cubes. Give a good stir then place into the oven and cook for another 15-20 minutes of until the lamb is cooked to the desired temperature. Remove from the oven and let rest for 5 minutes. Slice lamb and serve with Chimichurri sauce.
for the Chimichurri
  1. Add all of the ingredients into a food processor or blender and pulse until well combined. Serve on top of the lamb.
