Coconut Chicken Bites ~ With each passing year my boys seem to get more and more into sports. To me, this is not a bad thing but a good thing. Sure it’s a commitment as a parent to get them to all of their practices on time and to get the “right” shoes but, it’s a healthy way to get some of that boy energy out. My youngest has been drawn to football since I can remember. It’s not something we watch or play on a regular basis around here –– it’s just something he is passionate about. He loves the uniforms and can often be found wearing a black smear under his eyes just to go outside or hangout. I grew up watching a few Sunday night games and attending Super Bowl parties in our house but, I am not entirely sure where this l-o-v-e of the game comes from in my little one. He wants to play football on a team so badly and I am dreading even the thought of it. It’s a very rough sport and hearing stories about kids injuries and from a few of my adult friends that are still having knee or leg problems from when they played back in the day –– has me on the sorry-but-you-can-never-play team. We have come to a compromise (that’s what we do, right?) and he is allowed to play flag football this season and of course watch the Super Bowl. He is so thrilled that the big game falls on his birthday this year so it will be an even bigger treat to him. Armed with a big cozy blanket, his favorite stuffy friends and some good snacks such as these Coconut Chicken Bites –– watching the game will be a perfect way for him to spend his big day.
