Chicken Naanini Sandwich ~ This might be a strange thing to say, but I adore shredded chicken. Once you learn the basics of how to make it, you can then add as much flavor to it as you want to create a different meal each time. The best part? This one is quick. In this recipe, I decided to add some Asian influence with a touch of Indian (oh, the joys of cooking and naan bread) to make these hearty sandwiches –– AND if you don’t know by now I am a fool for a good sandwich. There’s a food truck here simply called The Jalopy and I love their juicy sandwiches. They wrap each one in foil to keep you from making a mess all of your shirt –– these are my kind of sandwiches. I think in order for one to be considered good it must be considered to be (a bit) messy first. Hummm… this could perhaps even be a metaphor for life, if you are looking for one. But if you are just looking for a good ole messy sandwich, you’ve found that too. Flecks of ginger and garlic swirling in with soy sauce and a touch of brown sugar add a lot of gusto to this sandwich. Top it off with some salty feta cheese crumbles, crunchy red cabbage strips, fresh cilantro, and serve it on some naan bread –– you might not want to change your shirt but instead go straight back for seconds.

Ingredients
  • 1 pound fresh chicken breasts - boneless & skinless
  • 3 cups apple juice
  • 1 large clove garlic peeled & minced
  • 3 Tablespoons soy sauce
  • 2 Tablespoons fresh ginger peeled & minced
  • 2 Tablespoons brown sugar
  • 1 Tablespoon hot sauce
  • 1/2 teaspoon ground black pepper
  • 1 Tablespoon corn starch
  • 2 Tablespoons cold water
  • 1 cup red cabbage chopped
  • 1 cup feta cheese crumbled
  • 1 cup fresh cilantro chopped
  • 4-6 medium naan bread

Instructions
  1. Place chicken, apple juice, and garlic into a heavy duty pot over medium high heat and cover with a lid and let cook for 12 minutes. After 12 minutes, turn heat down to low and let the juice continue to cook but remove the chicken. Using two forks peel the chicken apart to shred.
  2. Whisk in soy sauce, ginger, brown sugar, hot sauce, and black pepper into the simmering apple juice. In a small bowl combine corn starch and water and whisk together until smooth. Once smooth add the mixture into the apple juice mixture and continue to whisk together.
  3. Next, add the chicken back to the pot of apple juice, give a good stir, and continue to cook for another 2 minutes. Remove from heat. Lay out the naan bread and top each piece with about a 1/2 cup of the shredded chicken down the middle. Top with crumbled cheese, cabbage, and cilantro. Serve.
