Apple, Cheddar + Basil Quesadillas ~ The rumors are true. Fall is here ~ whew. Last week, I was in the midwest and took the boys on an apple picking adventure to get a real sense of autumn. We picked well over 26 pounds of various types of apples –– some that I’ve heard of and tasted before and some that were new, at least to me. Wondering through the cool air between the apple trees certainly helped get us all in the mood for the season –– I even needed a sweater(!) but all you need is a warm pan and few ingredients to make these sweet & salty quesadillas. Simply add some crunchy apple slices inbetween some earthy whole wheat torillas stuffed with cheddar cheese and basil and you’ve got an easy fall recipe on your plate. I suppose this could be one of those special afternoon snacks or even a side dish but I opted to make this as a whole meal –– after all I felt like I ate my weight in apples while at the orchard.

Ingredients
  • 4 large tortillas I used wheat
  • 2 medium apples cored and siced thinly into rounds
  • 2 cups cheddar cheese grated
  • 1/2 cup fresh basil chopped
  • 1 Tablespoon unsalted butter

Instructions
  1. Place a large skillet over medium heat and add butter to the pan. Next add two of the tortillas (or one depending on how large your pan is) to the bottom of the pan, not on top of each other. Let the tortillas warm up for 10 seconds then flip over. Next sprinkle a 1/4 cup of cheese over each tortilla followed by a layer of apples then half of the basil for each tortilla. Top the apple slices and basil with another 1/4 cup of cheese followed by the other tortilla. Allow to cook until the bottom tortilla gets slightly golden in color -- about 2-3 minutes, then using a large spatula and your hand for support gently flip the entire quesadilla over.
  2. Continue to cook for another 2-3 minutes or until the bottom tortilla is slightly golden and the cheese is melted. Remove from pan, slice into triangles and serve warm.
Recipe Notes

You may have to cook in batches depending on the size of your pan.
