5 Delicious Beet Recipes + How to Roast Them

It took me a long time to come around to the world of beets and truly appreciate them. It was one of “those” vegetables that I just didn’t care for –– not for having a bad experience with them, but more for I just really didn’t know how to eat them so I chose not to partake in those ruby red spheres of greatness.  I remember standing in the kitchen helping my mom prepare for a party when she handed me a slice of raw beets. Hummmm … raw? I was very skeptical but she insisted in that way that only a mother can. Ok, if I must. Much to my surprise, I liked it … no, I loved it. A few years later while working in a fancy restaurant in Chicago, I was given a roasted beet and my world had changed in that moment of taking the first bite. Where had THIS been all my life? Roasted delicious-ness and I couldn’t get enough. If you haven’t tried a raw beet I recommend you do so immediately and if you’ve haven’t had them roasted well here’s a how-to video along with instructions and a few of my favorite recipes to make with roasted beets. Ingredients
  • 4-6 medium fresh beets
  • aluminum foil for wrapping
Servings: -3 cups

Instructions
  1. Preheat oven to 350 degrees. Wash beets and remove greens and roots. Place each beet into the center of a 10" piece of foil. Fold the foil up on all sides creating a point at the top, with the beet down in the center -- creating a tear drop shape. Squeeze foil shut, and press down slightly to create a flat bottom. Continue process until all of the beets are wrapped.
  2. Place wrapped beets into the oven and roast for 30-40 minutes until the beets are fork tender. Remove from the oven and allow to cool. Once cool, unwrap and use the back of a spoon to remove outer skin. Slice and serve in your favorite beet dish.
